Last Minute Summer Holiday: 10 Surprising Destinations

Over the past few weeks, I’ve been getting the same question over and over: “Help, we haven’t booked anything yet — where can we still go?”

Don’t worry — even though many popular destinations are fully booked or shockingly expensive by now, there are still plenty of countries where you can enjoy a surprisingly smooth and sunny last minute summer holiday in July or August. Some are less known, others just slightly off the beaten path — but all of them are still widely available, sun-filled, and absolutely worth visiting.

In this blog, I’m sharing my top 10 last minute destinations. From safaris to beaches, from Europe to Asia and even South America. Some are close to home, others a bit further away — but all are adventurous, accessible, and ready to be explored.

10. Canada – a surprisingly great pick for a last minute summer holiday

Looking for a destination for a last minute summer holiday filled with nature, freedom and adventure? Then Canada definitely deserves a spot on your list. July and August are ideal months to explore this breathtaking country — and the best part is: there’s still surprisingly good availability. Canada is so vast and spacious that even last minute, you’ll find plenty of choice when it comes to routes and accommodations.

Whether you go for a road trip through the Rocky Mountains, a city-meets-nature combo around Vancouver, or you prefer to explore the rugged coastline of Vancouver Island — this last minute destination has it all. From glaciers and turquoise lakes to wildlife, cozy mountain towns, and outdoor fun for the whole family.

Because there’s so much space and availability, it’s one of the few places where you can still book spontaneously, even in peak season. If you’re flexible with your itinerary or travel dates, you’ll have plenty of options. So no — your last minute summer holiday doesn’t have to stay within Europe!

9. Albania – sun, sea and tranquillity along the lesser-known Riviera

Looking for a last minute summer holiday by the sea — but without the crowds and sky-high prices? Then Albania might just be the perfect match. This Balkan gem is still relatively undiscovered, which makes it surprisingly affordable and still widely available in July and August. The beaches are stunning (think turquoise waters and white pebbles), the landscapes are wild and green, and the atmosphere feels a bit like Croatia — 20 years ago.

You can easily plan a road trip or base yourself in one spot along the coast. The Albanian Riviera stretches from Vlorë all the way down to Ksamil near the Greek border, with scenic bays, mountain villages and family-run tavernas along the way. The inland is just as rewarding, with places like the historic city of Gjirokastër, Lake Ohrid or the mountain region of Theth.

Because it’s still under the radar for most tourists, Albania offers great availability — even in high season. Flights to Tirana (or Corfu, with a ferry to Ksamil) are still easy to find, and your money goes a long way here. This destination is a true hidden gem for sun-seekers, nature lovers and anyone craving a bit of offbeat adventure.

8. South Africa – safari & coastline in one unforgettable summer holiday

In the mood for a last minute summer holiday that’s truly something special? South Africa has it all: wildlife safaris, vibrant cities, dramatic coastlines, and world-class wine. And although it’s winter there in July and August, that actually makes it the perfect time to go on safari. The dry season means better wildlife spotting, fewer mosquitoes, and pleasant weather. Around Cape Town, it’s quieter and surprisingly sunny, with around 18°C and lots of clear skies.

What makes this last minute destination even more appealing is that flights are still widely available (often at great prices), and since South Africa isn’t top of mind as a summer destination, you’ll have plenty of choice when it comes to accommodations and routes. You can self-drive (on the left!) or opt for organised day trips from Cape Town or Johannesburg.

We stayed here ourselves and I wholeheartedly recommend it. A charming guesthouse in quiet Green Point, just a short walk from the V&A Waterfront. With a pool, spacious rooms, and welcoming staff, it’s an ideal base for a few days in the city.

Spier Hotel – Stellenbosch
A large, beautifully landscaped wine estate with spacious family rooms, several restaurants, a pool, playground, and activities like cycling, art walks and bird spotting. Family-friendly, full of character, and a great base to explore the Cape Winelands.

Why South Africa is one of the most surprising last minute destinations:

South Africa might feel like a faraway bucket list trip — but right now, it’s both affordable and available. The winter season brings space and calm without compromising the experience. This last minute summer holiday is perfect for those seeking something more meaningful than the typical beach break — and craving the adventure of a lifetime.

7. Bali & Lombok – tropical escapes full of sun, culture, and nature

Craving palm trees, colorful temples, rice fields, and tropical beaches? Then Bali (and optionally Lombok) is the perfect choice for a last minute summer holiday. July and August fall right in the middle of the dry season, bringing plenty of sunshine, little rain, and endless opportunities to relax or explore.

Bali offers something for everyone: soak up culture in Ubud, lounge on the beaches of Sanur or Canggu, go snorkeling in Amed, or head to the more rugged nature in the north. Lombok is quieter, more untouched, and home to stunning beaches on its southern coast, like Kuta Lombok. The two islands are easily combined by ferry.

Ecuador might not be the first country that comes to mind for a last minute summer holiday — and that’s exactly what makes it so appealing. July and August fall during the dry season in both the Andes and the Galápagos Islands, making it an ideal time for a varied and adventurous trip. Best of all: Ecuador is compact, affordable, and surprisingly easy to travel around.

Whether you’re wandering through colorful colonial cities like Quito or Cuenca, heading out on a multi-day Amazon jungle tour, or unwinding on the Pacific coast — Ecuador has it all. The ultimate bonus? A visit to the Galápagos Islands — one of the world’s most extraordinary destinations for wildlife lovers. It takes some budgeting, but it’s absolutely worth it.

Why Ecuador is a surprisingly great last minute destination:

Because Ecuador offers an incredibly diverse mix of nature and culture in a relatively small area, it’s perfect for travelers who want to experience a lot in a short amount of time. And since it’s not yet flooded with tourists, you can often still find great deals, even during peak season. This last minute destination proves you don’t need to plan months in advance to enjoy a once-in-a-lifetime trip.

5. Portugal – a sunny summer holiday without the crowds

Portugal remains one of the best choices for a last minute summer holiday within Europe. And yes, the Algarve often books out early, but did you know that northern Portugal and the inland regions still offer plenty of availability in July and August? Think wide beaches, charming towns, rolling vineyards, and a laid-back atmosphere – all paired with delicious Portuguese cuisine and a sunny climate.

For those wanting to avoid the crowds, regions like the Alentejo, Costa Verde, and the area around Coimbra are true hidden gems. Even Porto and its surroundings are surprisingly family-friendly and easy to reach. Portugal is also relatively affordable and easy to explore with a rental car (I always recommend Sunnycars – we use them ourselves and love that there’s never any hassle with damages or insurance).

Portugal is easy to reach with direct flights, affordable in terms of food and accommodation, and has a wonderfully relaxed feel. In short: a top pick for a sunny, diverse, and stress-free last minute summer holiday.

4. Tanzania – the ultimate last minute summer holiday for safari and beach

Not thinking of Africa for a last minute summer holiday? Then Tanzania might just be the most unexpected gem on this list. July and August fall right in the middle of the dry season – which means clear skies, a pleasant climate, and ideal conditions for spotting wildlife. And the best part? Tanzania combines safari and beach in one unforgettable trip.

You can start with a safari in the world-famous Serengeti National Park or the stunning Ngorongoro Crater, and then fly to the tropical island of Zanzibar for powdery white beaches, turquoise waters, and a splash of culture. The distance may sound far, but Tanzania is surprisingly easy to travel – and many lodges and boutique hotels still have availability, even on short notice.

Slovenia is one of those countries you might not immediately consider for a last-minute summer holiday, but once you’ve been, you’ll want to go back. It’s relatively close (even doable by car), still more affordable than neighbours like Italy or Austria, and offers a fantastic mix of nature, culture, relaxation and – surprisingly – lots of kid-friendly activities.

In July and August, you’ll enjoy warm days, fresh mountain air and refreshing lakes. Whether you love hiking, swimming in crystal-clear water, relaxing in spas with water slides or sipping wine overlooking rolling hills – Slovenia has it all.

2. Thailand – a colourful last-minute summer getaway full of culture, nature and beaches

Thailand is a fantastic choice for a last-minute summer holiday if you’re into adventure, warm hospitality, delicious food, and variety. While July and August fall within the rainy season, don’t let that scare you off – the showers are usually short and intense, with warm and sunny weather in between. Especially in northern and eastern Thailand, the summer months are surprisingly pleasant.

Thailand is also easy to travel through. The infrastructure is good, accommodation is often still available, and prices are low compared to Europe. On top of that, the locals are incredibly welcoming – even with kids, you’ll feel right at home.

What you shouldn’t miss in Thailand:

Bangkok – a bustling metropolis full of street food, temples and boat tours

Kanchanaburi – jungle, rivers, history and unique floating stays

Northern Thailand (e.g. Chiang Mai) – elephant sanctuaries, mountains and local markets

Koh Tao or one of the tropical islands – perfect for snorkelling and relaxing

Sleep in a floating hut on the river with no electricity – just candlelight. A magical off-grid experience surrounded by jungle. Only accessible by boat, which makes it even more special.

Sairee Cottage Resort – Koh Tao
Charming, laid-back resort right on the beach, with a pool and dive school. Great vibes, perfect location, and breathtaking sunsets.
